Ingredients
- 2 large [360 g] Sweet Potato (Peeled)
- 1 tbsp [14 g] Olive Oil (Divided)
- 1 tbsp [18 g] Kosher Salt (Divided)
- 16 oz [448 g] Ground Turkey
- 1 clove [3 g] Garlic (Minced)
- 1 tbsp, fresh [3.8 g] Parsley (Chopped)
- 1 tsp [2.4 g] Onion Powder
- 1 dash [0.63 ml] Black Pepper
- 2 cup [40 g] Arugula (Rocket)
- 0.5 medium [100.5 g] Cucumber (Sliced)
- 0.25 medium [1 oz] Red Onions (Thinly sliced)
Directions
- Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper.
- Cut the sweet potatoes lengthwise into fries. Toss with three-fourths of the olive oil and one-third of the salt until evenly coated. Bake for 20–25 minutes, or until tender and lightly browned.
- In a bowl, combine the ground turkey, minced garlic, chopped parsley, onion powder, half of the remaining salt, and black pepper. Mix until just combined, then form into small meatballs.
- Place the meatballs on the prepared baking sheet and bake for 20–25 minutes, or until fully cooked through. If space allows, you may use the same baking sheet as the sweet potatoes.
- Add the arugula to a bowl and toss with sliced cucumbers, thinly sliced red onions, and the remaining olive oil and salt until lightly dressed.
- Serve the meatballs with the sweet potato fries and the dressed arugula salad.
