Chickpea Fried Eggs

Ingredients

  • 2 large [100 g] Egg
  • 0.5 tbsp [7 g] Olive Oil
  • 0.75 cup [187.5 g] Chickpeas (canned and drained)
  • 1 pinch [0.31 ml] Black Pepper
  • 1 dash [0.4 g] Salt
  • 1 tsp [4 g] Za’atar Seasoning
  • 0.5 tsp [0.9 g] Red Pepper Flakes

Directions

  1. Toss chickpeas in Za’atar Seasoning mix and chili flakes.
  2. Pan-fry chickpeas in olive oil over medium heat.
  3. When the chickpeas start to brown, crack a fresh egg on top of the chickpeas.
  4. Season the egg with a pinch of black pepper and kosher salt.
  5. Cook until the egg reaches your desired doneness.
