Shrimp and Avocado Salad

Ingredients

  • 4 oz (113g) cooked shrimp
  • 1 tbsp (10g) sesame seeds
  • 1/2 small avocado
  • 2 cups (42g) arugula or rocket
  • 1/2 medium cucumber, chopped
  • 1/8 small red onion, chopped
  • 1 tbsp (14g) fresh lemon juice
  • 1/2 tbsp (14g) olive oil
  • Salt and pepper to taste

Directions

Lightly toss together all ingredients and enjoy!
