Succotash Toast

INGREDIENTS
4 medium slice (4-3/4″ x 4″ x 1/2″) [100 g] Sour Dough
Bread
0.25 small [37 g] Red Onions (Thinly Sliced )
0.5 cup [85 g] Edamame (Shelled)
1 oz [28 g] Roasted Red Peppers (Thinly sliced)
0.5 can [170 g] Yellow Sweet Corn (canned, 15.5 oz)
(Drained )
1 cup [226 g] Cottage Cheese (4% milk fat)
1 tbsp [5 g] Nutritional Yeast
1 tsp [1.2 g] Kosher Salt
0.5 tsp [1.05 g] Black Pepper
DIRECTIONS
1. Optional: lightly toast sourdough bread slices.
2. Mix the cottage cheese, nutritional yeast, salt, and
black pepper in a bowl until combined.
3. Mix corn, red onion, roasted red peppers, and
edamame in a bowl until combined.
4. Spread the cottage cheese on top of each sourdough
slice and top with succotash mix. Refrigerate until
ready to eat.
